Gluten Free Brownies

I found a recipe on allrecipes.com for brownies so I changed it to be Gluten free, egg free, dairy free, and nut free (unless you add them :0) ). I times this recipe by 4 so I get about 2 9x13 pans or 1 extra large pan.

1/4 cup earth balance (melted)
3 Tablespoons cocoa powder
3 Tablespoons carob powder
*(or 6 Tablespoons of cocoa OR Carob)*
3/4 cup sugar (your preference more or less)
1/4 teaspoon salt
1/2 cup Authentic Foods Multi Blend All Purpose Gluten Free Flour
1/4 teaspoon Xanthan Gum
2 teaspoons pure vanilla
3 teaspoons (1Tbsp.) EnerG egg replacer
4 Tablespoons water
**Optional** add any type of chopped nuts in or on top
We use almonds
Mix everything well by hand. Bake at 325 degrees for at least 45 minutes (According to your brownie "likes") I believe I may have baked longer than this.

Tile Craft (very cheap)

Today we did an extremely fast craft. I bought the tile for 16 cents from Home Depot (using the back side of the tile). We had the color tiles from Oriental Trading Co. Used black permanent marker and elmer's glue and now have a nice little mosaic tile. :0)

My Daughter

This is for my daughter, Becca.
God has given us a beautiful girl that loves the Lord with all her heart. At age 14 (almost 15), I believe she is stronger in God's word than many adults. She tries to love and help everyone/anyone that comes in her path. She struggles with not feeling well (alot) but still pushes on. She has been put down and been mean to for reasons I do not know or understand. But I know that the Lord is with her and she will do great things for him. She can write poems/songs for the Lord in a matter of minutes where I can't even start in a matter of days. :0) I love being with her (even the rough times!) and enjoy all our wonderful and not so wonderful conversations. It seems some do not think we have a relationship but in fact we have a terrific/close relationship that I wouldn't trade for anything.
So, that is it. That's all I wanted to write for the moment.

Number Board

Here is a picture of our number board. It is a large foam board with 130 spaces. Each space has velcro on it along with each card. I also added the alphabet down at the bottom. You can make the cards different colors for counting by 2's, 5's, etc. I sometimes take random numbers off so Katie has to put them back in the right space. You can also make alot of alphabet cards to have the kids make words. (I still have to do this.). There is probably a ton of things you could do with this board.

Taking it easy

Today we will be taking it easy. Last night I felt so sick. Poor Ana is still going to the bathroom a lot. Becca is now sick. I have dr. appts. to change, etc. Because of this I think we will do alot of reading and not to much writing today, if any.
Quick note: I'm not much into politics BUT, I can't wait for this election to be over. I'm so tired of hearing about the candidates and how great they are...especially one of them!

Sickness, Weight and Heat

The past couple of days have been very interesting. We have a tummy virus going around. The 2 little ones seem to have gotten it the worst. Poor Ana feel asleep about an hour ago so upset because her little bottom hurts. Katie was really sick the other day but it hasn't kept her quiet or still. She continues to play and "hop" around the house all day. Tom was feeling sick last night and now it's my turn.
Sick or not, I made myself walk on the treadmill for 30 minutes. I'm going to try and log this in every day (that I walk) on the right side of my blog. Maybe this wll keep me accountable. We have Bob's wedding in May so I want to look nice.
Tonight is going to be a real cold one. The weather man was saying it will be below freezing. I really don't want to turn on the heat. We are waiting for the coal stove to arrive and I don't want to waste any money. I guess we will be getting the sweatshirts on during the day. This is hard because our house gets very cold.

Tonight's Dinner


Tonight and tomorrow we will be having chili and cornbread. The cornbread is gluten, milk, and egg free. I got this recipe from this site:

I had to change the eggs to the Ener G egg replacer. This is delicious. I made it in a bread loaf pan (to try it first) and it is gone. I now have to make more.

Quick Hello

I haven't written for awhile because we have been so busy. Last night Katie got sick, so this morning I was shampooing the rug and now I have to clean a bathroom floor....don't ask! Actually, I'll tell you. The other day Ana needed my help in the bathroom. So, to make a long story short, as I flushed the toilet a bottle of toothpaste decided to fall off the shelf and fall into the toilet at the same time...literally!! Ed had to take the whole toilet apart today to find that thing. Gotta go clean...Have a great day!

My Little Fireman
