DAIRY-FREE, EGG-FREE FUNNELCAKE






Today the kids made funnelcake. They really enjoyed this...especially Katie and Ana. Katie could not eat these fast enough.

4-1/2 teaspoons egg replacer
2 cups plus 6 Tablespoons soy milk or milk of your choice
1/4 cup (or more) sugar
measure out 3 cups of flour (your choice)
1/2 teaspoon salt
1/2 teaspoon baking soda
2/3 tsp. cream of tartar
2 teaspoons (pure) vanilla

Mix everything together adding flour a little at a time until a nice pouring consistency. You will use LESS than the 3 cups...just put the rest of the flour away that you do not use.
Pour alot of oil in the pan (I think it was about 1/2 inch.)
When pan is hot (a little more than medium heat but not fully high), pour the batter in a circular motion and than zigzag. at least 4-5 times. Fry until golden brown on both sides. This does not take long at all so be careful not to burn it.
Using tongs, place on paper towels and sprinkle with powdered sugar or topping of your choice.
