Fried Mozzarella Sandwiches

Many, many years ago, (yes, I was a young mom in my 20's), I made fried mozzarella sandwiches.  They were so delicious.  I do not have the ingredients today but I will be getting them on Friday.  Yum, I can't wait.

This is what I remember:

White bread with the crust trimmed off, cut into 2 triangles
mozzarella cheese, sliced and placed between two bread triangles
oil in a pan, heated
flour (with salt and pepper to taste) to dredge the sandwiches
eggs, beaten

For each sandwich cover with the flour, put into egg mixture (do not soak), and then again into the flour  covering the sandwich well.
Fry in the oil until golden brown.
Drain between paper towels

P.S. I think I also used thinly sliced tomatoes with the cheese.
