Today I decided to make some Gluten Free Scones. I found recipes at http://karinaskitchen.blogspot.com/

The scones I have made are a combination of the two and changes.
I used:
1 cup sorghum flour
**3/4 cup cornstarch
3/4 cup tapioca flour
1/2 cup coconut flour
**1/3 cup unsweetened coconut
3/4 teaspoon xanthan gum
1 Tablespoon baking powder
1/2 teaspoon baking soda
3/4 cup earth balance very, very soft (from the round container)
1/3 cup honey (I'm going to try Rice Syrup next time)
1 cup buttermilk...I used plain soymilk with 1 Tbsp. lemon juice
1 cup frozen strawberries sliced and cut into pieces (not thawed) with 1 Tbsp. brown sugar (I added a little more)
1/2 cup Tropical Source chocolate chips ( I add a few chips more)

I mixed the dry ingredients; added the earth balance and mixed until well blended (with a fork or spoon.)
Mix in the honey and buttermilk. Will be soft. Carefully add in the strawberry pieces and chocolate chips.
Form into two balls on a greased (earth balance) baking sheet (I use the shiny kind).
flatten to about 1/2 to 1 inch thick...I like these to be about 3/4 inch.
Slice each flattened ball into 8 scones and separate on the baking sheet.

Bake for 20 minutes at 400 degrees. Excellent!!!
Next time I will try using vanilla soymilk and I wonder if sweetened coconut would be good?
