This afternoon Katie could not sit still. I decided that instead of paper/book work, we would make some dessert and make "bread".
First we made a Chocolate Coconut Chia Pudding. I used:
2 cups cold canned coconut milk (and added a small amount of unsweetened almond milk to make it a full 2 cups)
1/3 cup Chia seeds
1/3 cup Cocoa Powder
1/4 cup Agave
sprinkled in the cinnamon to our liking.
We placed all ingredients into a mason jar, shook, and put in the refrigerator for just a few hours. The canned coconut milk was cold so it thickened quickly. Next time, we will add less cocoa powder for Ana. The chocolate was quite strong. Katie and I like that.

This bread is easy to make and very versatile. The girls enjoyed make them. Each ramekin serves 1. Ana made 2 breads with Enjoy Life Mini Choc. Chips and 2 breads with raisins. Katie made 2 plain breads and 2 with the chocolate chips.
For dinner Ana cooked a ham so I had a plain "bread" with a piece of ham and egg on it. delicious. I could have added cheese, etc. but I am not feeling well today.
